Homemade Teriyaki Sauce

This is much better than bottled teriyaki sauce. Use fresh garlic & ginger if possible

Ingredients

  • 1 cup water
  • 5 tablespoons packed brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup sake (optional)
  • 1/4 cup mirin (optional)
  • 1–2 tablespoons honey
  • 1 large clove of garlic, finely minced
  • 1/2 teaspoon finely minced fresh ginger
  • 2 tablespoons cornstarch
  • 1/4 cup cold water

Instructions

  1. Combine all ingredients except the last 2 (cornstarch & water) in a medium saucepan and set over medium heat.
  2. In a small bowl, combine the cornstarch with the 1/4 cup water and whisk until dissolved. Add the cornstarch mixture to the saucepan.
  3. Heat the sauce until it thickens to your desired thickness. If the sauce becomes too thick, add more water to thin it out.

Notes

  • If you don't have sake or mirin, just leave them out
  • You can use powdered ginger and/or garlic, but it won't taste nearly as good
  • To mince ginger, cut off a section, peel it and cut into slices. Smash each slice with the side of knife and chop finely
  • Ginger is a good thing to keep in the freezer, but it's convenient to peel it before freezing. When you need some just cut of a chunk or shave off slices
