Strawberry Spinach Salad

Ingredients

  • 4 cups organic baby spinach leaves
  • 1/4 red onion slivered into strips as thin as possible
  • 1 1/2 cups fresh strawberries cut into slices
  • 2-4 tablespoons goat cheese (depending on how much you like on your salad)
  • Handful of sliced almonds
  • Dressing of your choice (I like balsamic or poppy seed)

Instructions

  1. Add the almonds to a dry non-stick frying pan and heat over medium heat for 2-3 minutes tossing frequently until they start to brown and you can smell them. Remove from the pan and set aside to cool. Do not leave in the pan over the burner or they will burn!
  2. Put the spinach in a serving bowl
  3. Sprinkle the strawberries over the spinach, crumble the goat cheese over the salad, then add the onions and almonds

Notes

  • Since there aren't many ingredients, the quality makes a big difference. Make sure the strawberries and spinach are fresh
  • Don't skip toasting the almonds, it makes a difference
