Sauce Milanaise
Tomato sauce with mushrooms, ham and tongue
A classical French sauce named for Milan, which is a very French thing to do. Sauce tomate with mushrooms, ham and tongue cut into fine julienne — served over pasta or a breaded veal cutlet.
Ingredients
- 2 tablespoons unsalted butter
- 6 ounces mushrooms, cut into julienne
- 3 ounces cooked ham, cut into julienne
- 3 ounces cooked tongue, cut into julienne (optional)
- 1/4 cup dry white wine
- 3 cups Sauce Tomate (see Sauce Tomate)
- 2 tablespoons grated Parmesan
- Kosher salt and black pepper
Instructions
- Melt the butter in a wide pan over medium-high heat. Add the mushrooms and cook until browned and dry, about 8 minutes.
- Add the ham and tongue and warm through for 2 minutes.
- Add the wine and reduce almost completely.
- Add the sauce tomate and simmer gently for 15 minutes.
- Stir in the Parmesan off the heat and season.
Notes
- Leave out the tongue if it is not to hand; the ham carries it.
