puff pastry

These are really easy and very tasty puff pastry appetizers. They are basically rolled and cut puff pastries with various fillings. They can be prepared ahead and frozen until you’re ready to serve.

Ingredients

Base recipe

  • 1 sheet puff pastry (there are usually 2 in a box)
  • 1 package cream cheese
  • milk as needed to loosen
  • grated parmesan
  • ingredients for various flavours (see below)

Mushrooms

  • 1/2 - 3/4 lb of mixed mushrooms (e.g. shitake, oyster, maitake, crimini)
  • 1 large shallot, chopped finely
  • 1 clove garlic, crushed and chopped

Chipotle

  • 1 tablespoon adobo sauce from a can of chipotles (you can also include a little chipotle too)
  • 4 oz (1/2 a log) goat cheese (and reduce the cream cheese to 1/2 package)
  • 2 tablespoons chopped cilantro

Pesto

  • Pre-made pesto sauce, e.g. from Costco or Trader Joes. Use enough to cover the sheet with a thin layer of pesto, usually about 3-4 tablespoons

Feta/Roasted pepper

  • About 3/4 cup crumbled feta
  • About 3/4 cup Finely shopped roasted bell peppers

Instructions

  1. If frozen, put puff pastry into the fridge the night before
  2. Remove the puff pastry sheet from the box and let warm up a little
  3. Preheat the oven to 400F
  4. Sprinkle some flour on a flat surface (e.g. a cutting board) and unfold the puff pastry onto the surface and roll it out. I like to divide the pastry into 2 sections and roll out separately
  5. Roll the pastry sheet so it's about twice the original size
  6. Spread half the cream cheese mixture over the top of the half sheet of puff pastry (a rubber spatula works well for this)
  7. Spread or sprinkle the other ingredients (unless already mixed) over the top of the cream cheese
  8. Using the long edge, tightly roll up the puff pastry and place seam side down onto a baking sheet lined with parchment paper (or a silicone mat)
  9. Put the baking sheet with the roll(s) in the fridge for 1 hour
  10. Using a serrated knife, cut the roll into 1/2-3/4 inch slices
  11. Spread the slices out onto the parchment paper on the baking sheet
  12. Place the baking sheet into the oven. The centre rack is preferred, but if you have multiple sheets, rotate half way through cooking
  13. Bake for 8-9 minutes then flip the slices over and bake for 8-9 minutes more. Rotate sheets if using multiple
  14. When the slices are golden brown and puffed, remove from the oven and sprinkle with parmesan cheese
  15. Move to plates and serve

Notes

  • You can freeze these after you cut them (but before you cook them). To cook, put the frozen slices on parchment paper on a baking sheet and cook at 400F for about 25 minutes (flipping over half way) until golden brown
  • these double in size when cooked, so maybe cut the sheet into half lengthways before filling
