Pear & Blue Cheese Salad

This is one of go-to salads, especially with Italian/French food
Ingredients
- 4 handfuls of mixed greens
- 1/4 red onion slivered into strips as thin as possible
- 1 Bartlet pear, peeled and cut into 3/4" chunks, sprinkled with lemon or lime juice to prevent browning
- 2-4 tablespoons blue cheese (depending on how much you like on your salad)
- 1/2 cup toasted pecans (e.g. Trader Joe's) broken into pieces
- Dressing of your choice (I like balsamic)
Instructions
- Put the greens in a serving bowl
- Sprinkle the pears over the greens, crumble the blue cheese over the salad, then add the onions and nuts
Notes
- If you make sure the pear pieces are covered with lemon juice you can make this a few hours ahead. Add the nuts just before serving though, otherwise they will get soft
- If you don't have Trader Joe's pecans, add some pecan halves to a dry nonstick pan and toast for 2-3 minutes (until you can smell the nuts toasting). Add a tablespoon of sugar and a dash of chilli powder (optional) and stir until the sugar melts into the nuts. Be careful not to burn.
