Spicy Peanut Vinaigrette
like Trader Joe's
This is based on Trader Joe's Spicy Peanut Vinaigrette. It's not quite as good, but still pretty tasty.
Ingredients
- 1/4 cup water
- 1/4 cup rice vinegar
- 1/4 cup of canola oil
- 2 Tbsp of sugar, splenda equivalent, honey, maple syrup or agave syrup (whatever you have/like)
- 4 Tbsp of creamy peanut butter
- 1 Tbsp of low sodium soy sauce
- 1 tsp Sesame oil
- ¼ tsp Ground cumin
- 1/2" piece of ginger, smashed and minced
- (Big) Pinch of red pepper flakes
- If you are a cilantro lover, add 3 tsp. Of cilantro leaves
Instructions
- Add all the ingredients in a medium bowl.
- Using a hand blender, mix everything until well incorporated (approx. 30 seconds).
- If mixing by hand, whisk everything until fully incorporated.
Notes
- Chunky peanut butter doesn't seem to work as well, it's a bit too dry and grainy
- If you happen to have some coconut milk or coconut water available then add a little of that too
