Spicy Peanut Vinaigrette

This is based on Trader Joe's Spicy Peanut Vinaigrette. It's not quite as good, but still pretty tasty.

Ingredients

  • 1/4 cup water
  • 1/4 cup rice vinegar
  • 1/4 cup of canola oil
  • 2 Tbsp of sugar, splenda equivalent, honey, maple syrup or agave syrup (whatever you have/like)
  • 4 Tbsp of creamy peanut butter
  • 1 Tbsp of low sodium soy sauce
  • 1 tsp Sesame oil
  • ¼ tsp Ground cumin
  • 1/2" piece of ginger, smashed and minced
  • (Big) Pinch of red pepper flakes
  • If you are a cilantro lover, add 3 tsp. Of cilantro leaves

Instructions

  1. Add all the ingredients in a medium bowl.
  2. Using a hand blender, mix everything until well incorporated (approx. 30 seconds).
  3. If mixing by hand, whisk everything until fully incorporated.

Notes

  • Chunky peanut butter doesn't seem to work as well, it's a bit too dry and grainy
  • If you happen to have some coconut milk or coconut water available then add a little of that too
