Broiled Miso Salmon

Ingredients

  • 1 pound wild salmon, cut into 4 equal portions
  • 1/4 cup white miso, available at amazon, Asian/gourmet markets
  • 1/2 cup mirin
  • 1/2 cup sake (optional)
  • 1 tablespoon brown sugar
  • 2 garlic cloves, crushed
  • 1 teaspoon grated ginger
  • 1 scallion, green parts only, thinly sliced

Instructions

  1. In a small bowl, combine miso, mirin, sake (if using) sugar, garlic and ginger
  2. put the fish in a ziploc bag and add the marinade
  3. Place in refrigerator and allow to marinade at least 6 hours or up to overnight
  4. Remove from refrigerator 30 minutes before cooking. Preheat oven to 400F
  5. Transfer fish to a sheet pan lined with foil. Discard excess marinade
  6. Place fish on the second rack from the top and bake 6-7 minutes
  7. Turn the oven to broil, put the fish on the top rack and broil 2-3 minutes, or until fish is slightly browned and flakes easily with a fork
  8. If you wish to serve the fish without the skin, carefully slide a fish spatula between the skin and flesh
  9. Top with scallions (and/or sesame seeds) and serve

Notes

  • You can do this with any slightly oily, flaky fish. It is really good with grouper or black cod, and would probably work with regular cod, bass, halibut etc.
  • Don't skip putting foil on the sheet pan, or you will be trying to scrape off burnt marinade for quite a while
  • This works well with coconut (cauliflower) rice and a green vegetable
