Hungarian Cucumber Salad

A simple and refreshing side salad that goes well with Hungarian dishes like Chicken Paprikash
Ingredients
- 2 medium cucumbers, peeled and sliced very thinly
- 1 Tbsp kosher salt
- 1/2 small Vidalia or sweet onion, sliced very thinly
- 4 tsp red wine vinegar
- 2 Tbsp olive oil
- Freshly ground black pepper
- 3 Tbsp chopped fresh dill
Instructions
- Put the cucumber slices in a collander and sprinkle with 1 1/2 tsp (1/2 of the Tablespoon) of the salt, shaking to distribute evenly
- Put the onions in a small bowl and sprinkle with the remaining salt, adding about 1 tsp of the vinegar as well
- Let the vegetables stand for at least 10 minutes and up to 30 minutes
- Rinse the vegetables in cool water and squeeze out the excess moisture
- Mix the cucumbers and onions.
- Add the remaining 1 Tbsp vinegar and a good grind of fresh pepper. Taste and add more vinegar if you like.
- Toss with the dill.
- Chill for at least 30 minutes before serving
Notes
- If you have a mandolin, use that to slice the veggies thinly and evenly
