Hungarian Cucumber Salad

A simple and refreshing side salad that goes well with Hungarian dishes like Chicken Paprikash

Ingredients

  • 2 medium cucumbers, peeled and sliced very thinly
  • 1 Tbsp kosher salt
  • 1/2 small Vidalia or sweet onion, sliced very thinly
  • 4 tsp red wine vinegar
  • 2 Tbsp olive oil
  • Freshly ground black pepper
  • 3 Tbsp chopped fresh dill

Instructions

  1. Put the cucumber slices in a collander and sprinkle with 1 1/2 tsp (1/2 of the Tablespoon) of the salt, shaking to distribute evenly
  2. Put the onions in a small bowl and sprinkle with the remaining salt, adding about 1 tsp of the vinegar as well
  3. Let the vegetables stand for at least 10 minutes and up to 30 minutes
  4. Rinse the vegetables in cool water and squeeze out the excess moisture
  5. Mix the cucumbers and onions.
  6. Add the remaining 1 Tbsp vinegar and a good grind of fresh pepper. Taste and add more vinegar if you like.
  7. Toss with the dill.
  8. Chill for at least 30 minutes before serving

Notes

  • If you have a mandolin, use that to slice the veggies thinly and evenly
