Bread Pudding
Basic bread pudding
This is a basic bread puddine recipe, feel free to add any other flavours (coconut, mango, raisins etc)

Ingredients
- 2 tablespoons butter, melted, plus more for the baking dish
- 2 1/2 cups brioche bread cubes (1-inch cubes)
- 2 1/2 cups whole milk or half-half
- 1 1/2 tablespoons vanilla
- 2 large eggs
- 1 egg yolk
- 1/4 cup granulated sugar
- 1/4 cup lightly packed brown sugar
Instructions
- Preheat the oven to 325 degrees F.
- Arrange the bread cubes tightly in a 9-inch baking dish, so that you know that you have enough.
- Transfer the bread cubes to a sheet pan and put in the oven for 3-5 minutes to dry out. Make sure they don't burn though
- Butter the baking dish.
- Once dry, put the toasted/dry bread into the (now buttered) baking dish
- Beat together the butter, milk, vanilla and eggs in a large bowl. Add the granulated and brown sugars and mix until dissolved. Pour the mixture over the bread.
- You can put the dish in the fridge (up to overnight) at this point, but if you do be sure to cover it with plastic wrap and ensure the it is in contact with the top of the custard.
- Put the baking dish on a baking sheet. Bake until the crust is golden brown, 55 to 70 minutes. Let rest for 20 minutes before serving.
- Enjoy with some ice cream
