Ingredients

  • 4.4 oz All-purpose flour (1 US cup)
  • 1 Tbsp Baking powder
  • 1 Tbsp Granulated sugar
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 5.3 oz Banana (Ripe) (about 1 1/4 medium-size bananas)
  • 1.75 oz Egg (1 large egg)
  • 1 Tbsp Oil
  • 5.6 oz Milk (2/3 US cup)

Instructions

  1. Mix the dry ingredients: Combine all-purpose flour, baking powder, sugar, salt, and cinnamon. Mix well with a whisk.
  2. Mash the bananas in a medium bowl with a fork.
  3. Add eggs and oil to the mashed banana and mix with a whisk.
  4. Add milk and mix.
  5. Combine the wet ingredients and dry ingredients. Mix well until you don't see any lumps of flour. You'll still see small pieces of banana but it's totally fine.
  6. Heat the nonstick pan at medium heat and drop a tiny bit of oil. Spread it all over the surface.
  7. Pour the pancake batter once the pan is heated enough. Today, I used a regular-size ice cream scoop for 4-inch pancakes.
  8. Flip it with a spatula when you start seeing the bubbles on the surface of the pancakes.
  9. Check the bottom - once it gets a nice golden brown and the top bounces back gently when you touch it, It is done!
  10. Take them out from the pan and repeat.
