Bacon-Wrapped Orange Chipotle Shrimp

Sweet and spcy shrimp with bacon, what's not to like? These are meant as appetizers

These are really good camping! Good for brunch or a gathering, but not god for a potluck because they don't travel well.

Ingredients

  • 1 lb shrimp (or whatever you need for the number of people), peeled
  • 1 orange
  • 2 chipotles en adobo, plus some of the adobo sauce
  • 3 cloves garlic, peeled
  • 2 tablespoons honey
  • 1 tablespoon canola oil
  • enough bacon to wrap shrimp (1 rasher per 2 shrimp)
  • skewers for cooking the shrimp

Instructions

  1. Juice the orange and add it to a blender with the chipotles, garlic, honey and oil and blend until the chipotles are chopped and incorporated
  2. Pour the orange mixture into a ziploc bag and add the shrimp. Seal and set aside for about 10 minutes (but no longer than 30 minutes)
  3. Heat the grill or preheat oven to 400F
  4. Cut the bacon into halves
  5. Wrap a shrimp in a piece of bacon and thread onto a skewer. Continue until all shrimp have been wrapped and threaded. Do not crowd the shrimp as you want the bacon to cook
  6. Put the skewers on the grill or place on a baking sheet and put in the oven. Turn after 2 minutes and cook for 2 more minutes. If the bacon isn't cooked enough keep cooking and turning until is cooked (but not crispy)

Notes

  • The pre-cooked Costco bacon is good here
  • You can make this without bacon, it's still very good
