Bacon-Wrapped Orange Chipotle Shrimp
Sweet and spcy shrimp with bacon, what's not to like? These are meant as appetizers
These are really good camping! Good for brunch or a gathering, but not god for a potluck because they don't travel well.
Ingredients
- 1 lb shrimp (or whatever you need for the number of people), peeled
- 1 orange
- 2 chipotles en adobo, plus some of the adobo sauce
- 3 cloves garlic, peeled
- 2 tablespoons honey
- 1 tablespoon canola oil
- enough bacon to wrap shrimp (1 rasher per 2 shrimp)
- skewers for cooking the shrimp
Instructions
- Juice the orange and add it to a blender with the chipotles, garlic, honey and oil and blend until the chipotles are chopped and incorporated
- Pour the orange mixture into a ziploc bag and add the shrimp. Seal and set aside for about 10 minutes (but no longer than 30 minutes)
- Heat the grill or preheat oven to 400F
- Cut the bacon into halves
- Wrap a shrimp in a piece of bacon and thread onto a skewer. Continue until all shrimp have been wrapped and threaded. Do not crowd the shrimp as you want the bacon to cook
- Put the skewers on the grill or place on a baking sheet and put in the oven. Turn after 2 minutes and cook for 2 more minutes. If the bacon isn't cooked enough keep cooking and turning until is cooked (but not crispy)
Notes
- The pre-cooked Costco bacon is good here
- You can make this without bacon, it's still very good
